FRIDAY FEATURE - Flatbread

I have eight orders for flatbread so thought I better get started.  I'm not including the recipe but have it available on email for anyone who wants it - hejohnson@xplornet.ca


The first picture has the basic "tools" - lefse grill, set at 400 degrees for flatbread, lefse rolling pin with a knit "sleeve" covering it, round board covered with a cotton cloth and my special lefse stick.  The stick was a Christmas gift in 1969, the year we had to give handmade gifts in our family.  Dad made lefse sticks, patiently filing and smoothing a hardwood yardstick until it was better than any stick that you can buy.  Mom used a wood burning tool to add a flower, his initials MCE and the year '69.  


If you don't have all those "tools" you can still make flatbread, rolling it out in smaller rounds and baking it on a cookie sheet in the oven.


It's been a different week and I wasn't in a blogging mood until today.  Last Tuesday I took Howard to see our family doctor in Weyburn.  She made an appointment with the psychiatrist and he recommended that Howard spend a few days at the Mental Health facility at Tatagwa View.  It's a lovely facility with caring staff. He has his own room and bathroom.  He spent some time there four years ago when he was depressed.  This time he's not depressed but was in a hyper mood - talked steady with rambling thoughts, was up in the night and busy with different activities, too "busy" to sleep!  His personality changed and he would get upset very easily.  I'm sure our cats noticed the difference too!  He's not really a cat lover and would holler at them when it was feeding time.  But last week he couldn't do enough for the cats - heated milk for them (then forgot about it until I smelled burnt milk on the stove) and even had a couple cats in the house from time to time.  


I visited him yesterday afternoon, but he was ready for a nap when I came.  It was good to see him fall asleep quickly, no doubt due to medication he's getting.  The Dr. wants him to have a CT scan next week in Regina so Clare will take him up for that.  I'll go up again on Sunday.


So I am catching up on my sleep too, have an afternoon nap and go to bed early.  I don't mind being alone.  I've stocked up on groceries in case the weather takes a turn for the worse.  The roads are good so far and the forecast for the weekend promises sunshine.  I think Clare and Carl are coming out tomorrow so I'll have some jobs for them to do.


I'm thankful that SK takes such good care of people who are suffering from mental health problems. I know it isn't always easy to see a Dr. when needed so we were blessed to get immediate attention.


I may spend a couple days with Laurel and the kids at Milestone next week as Greg will be away from Monday to Friday.  He and his sister are flying with their mother to her winter home in Hemet, CA.  They will help her get settled and check out the car that she bought last year.  That beats the driving down that they have done in previous years.


I enjoyed our Fifty and Over club's Christmas party on Wednesday evening.  Our supper was catered by EB's in Estevan.  This was followed by carol singing and a Chinese gift exchange for the 31 in attendance.  That's always a fun time, with some "stealing" of gifts taking place.  We enjoyed the traditional box of Christmas oranges which was followed by games.  I didn't stay for that but went home for an early bedtime.


The annual South-East, North-West Chorus annual Christmas program will be on Saturday night in Estevan and Sunday afternoon in Crosby, ND. Pastor Cicely is one of the singers.  We used to take in the one in Crosby until our border hours changed to five o'clock closing.  I don't think I'll venture out tomorrow night.  I'm enjoying new Christmas CD's on our Bose -  "The Perfect Gift" by the Canadian Tenors and Susan Boyle's "The Gift".
