I didn't get at any baking done for Friday's blog and we are planning a morning trip to Estevan so thought I'd just have to skip that feature this week. But then I talked to Laurel. Lo and behold she had made a big batch of Lemon Poppy Seed bread and muffins and had even taken pictures of them! So she is my guest blogger this week. Maybe that will be a new Friday feature, a guest blogger. Who wants to be next?

Baked up today Nov 4..was a zucchinni in fridge still good, so grated it up.
Today was Kristy's b-day, it also would have been Dan and Gaylene's 49 wedding anniversary and today it's Frank and Leah Kime's 60th wedding anniversary. They left for Mesa, AZ on Sunday. To celebrate 60 years, a family Carribbean cruise is being planned for winter time!!
Lemon Poppy Seed Loaf & Muffin Recipe
From Gaylene Diekrager to Laurel
4 cups flour
1 TBSP baking powder
1 1/2 tsp soda
1/2 tsp salt
1 small package lemon instant pudding
4 eggs
1 1/2 cups sugar
1 1/2 cups oil
1 1/4 cups milk
1 tsp lemon extract
juice and rind of 1 lemon
2 cups peeled and grated zucchinni
1/2 cup poppy seed
Mix dry ingredients..set aside
Beat eggs, sugar, oil, milk, lemon juice.
Add zucchinni, poppyseed and rind.
Add dry ingredients.
Stir until moist.
Bake loaf 325 for 50-60 min
muffins 350 for 15-20 min
Makes a large recipe, so lots to share!
